Shrimp Mexican Style

2 Tbl. of oil.
6 Oz of diced onions.
4 Minced garlic cloves.
2 Lbs. of ripe tomatoes, peeled and chopped
1/2 Tsp. of pepper
2 Bay leaves
1 Tbl. Salt
2 Tbl. of canned chile guero juice
2 Tbl. of butter
2 Lb. of shrimp
3 Tbl. chopped parsley
Canned Chiles gueros

  • Heat oil in skillet, add onion and garlic, cook for 2 minutes, or until transparent, add tomatoes, and cook at medium heat, for 5 minutes, stirring constantly, add pepper, bay leaves, thyme, salt and chile juice.
  • cook shrimp with butter (not completely)
  • add shrimp to the salsa, finish cooking, sprinkle with chopped parsley, and adorn with a guero chile
