Pork Guisado of Puebla México

2 Diced onions
3 Tbl. butter
4 Peeled and sliced sausages
6 Peeled tomatoes, roasted, and seeded
6 Chiles chipotle in adobo, chopped and drained
2 Lbs. of pork cooked in water with an onion, 4 cloves of garlic and salt to taste
3 Potatoes cooked and diced

  • Cook onions until transparent
  • Add sausages and fry until cooked
  • Drain, eliminating excess of fat, return the sausage to the skillet
  • Purée the tomatoes with 3 of the chipotle chiles
  • Add the Purée and the rest of the chiles to the sausage, cook to medium heat for 10 minutes
  • Shred the pork and add to the sausage
  • Add the potato and season with salt and mix, cook a few minutes and serve hot
